Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, beat softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well each time. Stir in vanilla extract.
  4. Gradually add the dry ingredients alternating with buttermilk; mix until just combined.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  7. For the filling, beat together cream cheese, powdered sugar, lemon zest, and juice until smooth. Whip heavy cream until stiff peaks form and gently fold into the lemon mixture.
