  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)

  • 2 shots espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, combine chopped dark chocolate and butter. Microwave in intervals, stirring until melted.
  3. Whisk brown sugar and granulated sugar into the melted chocolate until well blended.
  4. Add eggs one at a time, whisking until fully incorporated before adding the next.
  5. Sift in flour and salt, gently folding until just combined; do not overmix.
  6. Pour the batter into the prepared tin and smooth out the top. Bake for 25-30 minutes or until done.
  7. Once baked, poke holes in the brownies with a skewer and pour espresso shots evenly over them. Allow cooling completely before serving.
