  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped; optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water
  • 2 tablespoons masa harina (for thickening, if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Toast the dried peppers in a dry pan for 1–2 minutes until aromatic.
  2. Remove stems and seeds from the toasted peppers, then soak them in hot water for about 20 minutes until soft.
  3. Blend soaked peppers with some soaking water and salt until smooth, then set aside.
  4. Toss cubed beef with cumin, salt, and pepper until evenly coated.
  5. Heat olive oil in a large pot over medium-high heat; sear seasoned beef for about 6–7 minutes, then set aside.
  6. In the same pot, cook chopped onions and jalapenos for about 5 minutes until softened. Add garlic and cook for an additional minute.
  7. Return seared beef to the pot along with reserved chili paste; cook together for about 3 minutes.
  8. Stir in beef stock and bring to a boil; reduce heat to simmer for approximately 2 hours until beef is tender.
