Instructions

- Remove stems and seeds from the toasted peppers, then soak them in hot water for about 20 minutes until soft.
- Blend soaked peppers with some soaking water and salt until smooth, then set aside.
- Toss cubed beef with cumin, salt, and pepper until evenly coated.
- Heat olive oil in a large pot over medium-high heat; sear seasoned beef for about 6–7 minutes, then set aside.
- In the same pot, cook chopped onions and jalapenos for about 5 minutes until softened. Add garlic and cook for an additional minute.
- Return seared beef to the pot along with reserved chili paste; cook together for about 3 minutes.
- Stir in beef stock and bring to a boil; reduce heat to simmer for approximately 2 hours until beef is tender.
