  • 2 eggs, lightly beaten
  • 2 green onions, sliced
  • 4 tablespoons teriyaki sauce (divided)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat. Cook diced chicken until browned and cooked through (about 5–7 minutes), then stir in 2 tablespoons of teriyaki sauce. Set aside.
  2. In the same pan, scramble the beaten eggs until just cooked; push them to one side.
  3. Add mixed vegetables to the pan and sauté for 2–3 minutes until slightly softened.
  4. Incorporate the cooked rice and reserved chicken into the pan, mixing everything thoroughly.
  5. Pour in soy sauce and additional teriyaki sauce to taste; stir-fry for another 2–3 minutes until heated through.
  6. Garnish with sliced green onions before serving hot.
