  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter
  • 1 cup dark brown sugar
  • 3 large eggs
  • 1 1/4 cup evaporated milk

  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1/4 cup ice water (more as needed)
  • 1/4 cup lemon juice (cold)
  • 1 egg (for topping)
  • 1 tablespoon milk (for topping)

Instructions

  1. In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Stir in ice water and lemon juice until combined. Form into a ball, wrap in plastic, and chill for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). Boil or steam sweet potatoes until fork-tender, about 30 minutes. Allow them to cool slightly before peeling.
  3. In a bowl, mash the cooked sweet potatoes until smooth. Add softened butter, dark brown sugar, eggs, cinnamon, ginger, nutmeg, cloves, salt, evaporated milk, and vanilla extract; mix well.
  4. Roll out chilled dough on a floured surface into a circle large enough for your pie dish. Transfer the dough into the pie dish and trim excess edges. Pour the sweet potato filling into the crust.
  5. In a small bowl, whisk together egg and milk; brush over crust edges. Bake in preheated oven for about 50–60 minutes or until set in the middle. Let cool before serving; top with whipped cream if desired.
