- 1 tablespoon milk (for topping)

Instructions
- In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Stir in ice water and lemon juice until combined. Form into a ball, wrap in plastic, and chill for at least 30 minutes.
- Preheat your oven to 400°F (200°C). Boil or steam sweet potatoes until fork-tender, about 30 minutes. Allow them to cool slightly before peeling.
- In a bowl, mash the cooked sweet potatoes until smooth. Add softened butter, dark brown sugar, eggs, cinnamon, ginger, nutmeg, cloves, salt, evaporated milk, and vanilla extract; mix well.
- Roll out chilled dough on a floured surface into a circle large enough for your pie dish. Transfer the dough into the pie dish and trim excess edges. Pour the sweet potato filling into the crust.
