Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. For the cookie base, cream softened butter with granulated and brown sugars until fluffy. Beat in an egg and vanilla, then mix in flour and baking powder.
  3. Press half the dough into the prepared pan as the base.
  4. For the lemonade filling, whisk together lemon juice, sugar, flour, salt, eggs, and melted butter until smooth; pour over the cookie base.
  5. Make the crumble topping by mixing flour and sugar with cold butter until crumbly; sprinkle over the filling.
