- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 pound lean ground turkey
- ½ cup black beans, drained and rinsed
- ½ cup canned corn, drained
- ½ cup diced tomatoes
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ¼ cup chopped fresh cilantro
- ½ cup shredded cheese, cheddar or Mexican blend
- Plain Greek yogurt, for topping (optional)
Instructions
- Preheat the oven to 400°F (200°C). Wash sweet potatoes and pierce them several times with a fork.
- Bake sweet potatoes directly on the oven rack or on a baking sheet for 45–50 minutes until fork-tender.
- While baking, heat olive oil in a skillet over medium heat. Sauté diced onion for 3–4 minutes until translucent; add minced garlic and cook for another 30 seconds.
- Add ground turkey to the skillet and cook until browned. Season with smoked paprika, chili powder, cumin, salt, and pepper.
- Stir in black beans, corn, and diced tomatoes; simmer for about 5–7 minutes.
- After baking, slice each sweet potato lengthwise and gently mash the flesh to create space for filling.
- Spoon turkey mixture into each potato and top with shredded cheese before returning to the oven for 5 more minutes.
- Garnish with fresh cilantro and optionally add Greek yogurt before serving warm.
