Ingredients

Scale
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • ½ cup unsalted butter (cold)
  • 34 tablespoons ice-cold water
  • 2 lbs strawberries (hulled and halved or quartered)
  • ¼ cup sugar (for filling)
  • 2 tablespoons cornstarch
  • ¼ cup butter (cold, for streusel)
  • ¼ cup brown sugar
  • ½ cup rolled oats
  • ¼ cup flour (for streusel)

Instructions

  1. To make the pie crust: In a bowl, combine flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. Preheat your oven to 350°F.
  3. Roll out the chilled dough on a floured surface and fit it into a pie plate. Trim excess crust.
  4. For the filling: In another bowl, mix strawberries, sugar, and cornstarch until well combined. Pour the mixture into the prepared crust.
  5. For the streusel topping: Combine cold butter, brown sugar, oats, and flour in a bowl until crumbly. Sprinkle over the strawberry filling.
  6. Bake on a baking sheet for 50–70 minutes until golden brown on top and bubbly around edges. Let cool before serving.
