Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 11 x 8-inch glass casserole dish.
  2. In a small bowl, soak chopped dates with baking soda. Heat the milk and pour it over the dates; let cool for about 15 minutes.
  3. In another bowl, mix flour, baking powder, and salt. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until combined. Gradually add the dry ingredients and then incorporate the cooled date mixture until smooth.
  4. Pour the batter into the prepared dish and bake for about 30 minutes or until set.
  5. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and non-dairy creamer until dissolved; simmer until thickened.
  6. After baking, poke holes in the pudding surface and pour some warm caramel sauce over it to soak in. Let sit for 15 minutes before serving.
  7. Serve warm topped with additional caramel sauce, whipped cream, and sea salt flakes.
