  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup beef broth
  • Garnish: chopped green onions and sesame seeds

Instructions

  1. In a large pan over medium heat, heat vegetable oil and sear the beef belly pieces until browned on all sides (about 5–7 minutes). Remove from the pan.
  2. Sauté minced garlic and sliced ginger in the same pan for 1–2 minutes until fragrant.
  3. Return the beef belly to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and beef broth. Stir well to coat.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 1 to 1½ hours until beef is tender and sauce thickens.
  5. Taste and adjust seasoning if needed; garnish with green onions and sesame seeds before serving.
