  • 2 tbsp mayonnaise
  • 1 tbsp spicy brown mustard
  • 3 drops red food dye (or beet juice)
  • Salt & pepper (to taste)
  • 12 medium cocktail olives (with pimentos)
  • 3 slices white bread (or 12 rice crackers)

Instructions

  1. Hard boil the eggs by placing them in cool water, bringing it to a boil, and cooking for 20 minutes. Transfer eggs to cold water for 2-5 minutes before peeling.
  2. Cut each egg in half horizontally and remove yolks. Press yolks through a mesh strainer into a bowl for a smooth mixture.
  3. Mix yolks with mayonnaise, mustard, salt, pepper, and red dye or beet juice until creamy.
  4. Cut circles from bread using a cookie cutter and toast until crispy (if using).
  5. Assemble by cutting olive-sized holes in the top of each egg half, adding olive slices inside, then placing them atop toasted bread or rice crackers.
