  • 50g Granulated Sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g Unsalted Butter
  • 80g Granulated Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Kosher salt
  • 1 Tbsp Corn starch
  • 125g Pecan Halves
  • 190g Unsalted Butter, at room temperature
  • 280g Brown Sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp Kosher salt
  • 115g Unsalted Butter, at room temperature
  • 225g Cream Cheese, at room temperature
  • 250g Powdered Sugar, sifted
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt

Instructions

  1. Warm the milk until lukewarm. In a mixing bowl, combine it with granulated sugar and yeast; let sit until foamy (5-10 minutes).
  2. In another bowl, whisk eggs and salt together. Add the yeast mixture, followed by flour and butter. Mix until combined, then knead until smooth. Allow dough to rise in a warm place until doubled (about 1 hour).
  3. For the filling, melt butter in a pan; add diced apples, sugar, cinnamon, salt, and cornstarch. Cook until apples are tender; stir in pecans.
  4. Roll out the dough into a rectangle and spread softened butter over it. Sprinkle with brown sugar mixed with cinnamon and evenly distribute apple filling.
  5. Roll the dough tightly from one edge and slice into equal pieces (12). Place cut side up in a greased baking sheet and let rise again for 30 minutes.
  6. Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes or until golden brown.
  7. Prepare frosting by beating together unsalted butter, cream cheese, powdered sugar, heavy whipping cream, and salt until creamy. Spread over warm rolls.
