- 250g whole milk, lukewarm
- 50g Granulated Sugar
- 2 1/4 tsp active dried yeast
- 2 large eggs, at room temperature
- 1/2 tsp kosher salt
- 565g All-Purpose Flour
- 100g Unsalted Butter, at room temperature
- 850g – about four medium apples, peeled, cored, and diced small
- 30g Unsalted Butter
- 80g Granulated Sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp Kosher salt
- 1 Tbsp Corn starch
- 125g Pecan Halves
- 190g Unsalted Butter, at room temperature
- 280g Brown Sugar
- 2 Tbsp plus 1 tsp ground cinnamon
- 1/8 tsp Kosher salt
- 115g Unsalted Butter, at room temperature
- 225g Cream Cheese, at room temperature
- 250g Powdered Sugar, sifted
- 1–2 Tbsp Heavy Whipping Cream
- 1/2 tsp kosher salt
Instructions
- Warm the milk until lukewarm. In a mixing bowl, combine it with granulated sugar and yeast; let sit until foamy (5-10 minutes).
- In another bowl, whisk eggs and salt together. Add the yeast mixture, followed by flour and butter. Mix until combined, then knead until smooth. Allow dough to rise in a warm place until doubled (about 1 hour).
- For the filling, melt butter in a pan; add diced apples, sugar, cinnamon, salt, and cornstarch. Cook until apples are tender; stir in pecans.
- Roll out the dough into a rectangle and spread softened butter over it. Sprinkle with brown sugar mixed with cinnamon and evenly distribute apple filling.
- Roll the dough tightly from one edge and slice into equal pieces (12). Place cut side up in a greased baking sheet and let rise again for 30 minutes.
- Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes or until golden brown.
- Prepare frosting by beating together unsalted butter, cream cheese, powdered sugar, heavy whipping cream, and salt until creamy. Spread over warm rolls.
