  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the chicken dry and rub with olive oil, garlic, thyme, rosemary, salt, and pepper.
  3. In a bowl, combine orange zest, juice, honey, soy sauce, and Dijon mustard.
  4. Place quartered onion inside the chicken cavity and set in a roasting pan. Pour chicken broth around the chicken.
  5. Brush half of the orange glaze over the chicken; reserve some for basting.
  6. Roast for about 1 hour or until internal temperature reaches 165°F (75°C), basting halfway through.
  7. Let rest for 10 minutes before carving.
