Instructions
- Grill or pan-sear the seasoned chicken breast over medium-high heat for 6–8 minutes per side until golden and cooked through. Slice into bite-size pieces.
- In a mixing bowl, combine mixed greens, cucumber, bell peppers, cherry tomatoes, and mango (if using). Drizzle with olive or sesame oil and vinegar; season with salt and pepper to taste.
- In a serving bowl, scoop cooked rice and top with sesame seeds or furikake. Arrange the grilled chicken slices around the rice along with the salad ingredients and sliced avocado.
