  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups pumpkin puree
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press half of the mixture into the bottom of the prepared dish for the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the base layer and spread evenly.
  6. Sprinkle remaining crumble mixture on top; add chopped walnuts if desired.
  7. Bake for about 30–35 minutes until golden brown and set. Let cool before slicing.
