- 3.4 ounces orange JELLO
- 1⅓ cups boiling water (combined with JELLO)
- ⅓ cup fresh-squeezed orange juice
- 15 ounces can of mandarin oranges (undrained)
- 3.5 ounces vanilla instant pudding mix
- 8 ounces Cool Whip
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, blend together the vanilla cake mix, eggs, milk, vegetable oil, and orange zest until well combined.
- Pour the batter into a greased 9×13 inch baking dish and bake for about 28 minutes or until a toothpick inserted comes out clean.
- Once baked, allow the cake to cool slightly and poke holes all over the top using a fork.
- In another bowl, dissolve the orange JELLO in boiling water. Mix in fresh-squeezed orange juice and pour over the poked cake.
- Spread undrained mandarin oranges on top and refrigerate for at least two hours.
- For frosting, combine vanilla pudding mix with Cool Whip until smooth and then spread over the chilled cake before serving.
