  • 1 cup milk (or vanilla almond milk)
  • ½ cup vegetable oil
  • 1 tablespoon orange zest
  • 3.4 ounces orange JELLO
  • 1⅓ cups boiling water (combined with JELLO)
  • ⅓ cup fresh-squeezed orange juice
  • 15 ounces can of mandarin oranges (undrained)
  • 3.5 ounces vanilla instant pudding mix
  • 8 ounces Cool Whip

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, blend together the vanilla cake mix, eggs, milk, vegetable oil, and orange zest until well combined.
  3. Pour the batter into a greased 9×13 inch baking dish and bake for about 28 minutes or until a toothpick inserted comes out clean.
  4. Once baked, allow the cake to cool slightly and poke holes all over the top using a fork.
  5. In another bowl, dissolve the orange JELLO in boiling water. Mix in fresh-squeezed orange juice and pour over the poked cake.
  6. Spread undrained mandarin oranges on top and refrigerate for at least two hours.
  7. For frosting, combine vanilla pudding mix with Cool Whip until smooth and then spread over the chilled cake before serving.
