Ingredients
- 1 lb boneless, skinless chicken breast
- 2 tablespoons olive oil
- 1½ cups long-grain white rice
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 2¼ cups chicken broth
- 1 cup nacho cheese sauce
- 1½ cups shredded cheddar cheese
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken pieces and season with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until mostly cooked.
- Stir in uncooked rice and the entire can of Rotel. Toast rice for 1–2 minutes.
