Ingredients

Scale
  • 3 1/2 cups all-purpose flour
  • 1 1/4 cups superfine sugar
  • 3 tsp baking powder
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup vegetable oil
  • 2 tbsp Greek yogurt
  • Cocoa powder, strawberry essence, pink food dye for flavoring and color

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, cream softened butter and then add eggs one at a time. Mix in milk, oil, yogurt, and vanilla extract until smooth.
  3. Gradually incorporate dry ingredients into wet ingredients until just mixed.
  4. Divide the batter into three bowls: add cocoa powder to one for chocolate; strawberry essence and food dye to another for strawberry; leave the third as vanilla.
  5. Layer each flavor into cupcake liners—start with chocolate, followed by vanilla, and top with strawberry.
  6. Bake for 18–20 minutes or until a toothpick comes out clean. Allow cooling completely before frosting.
  7. Prepare frosting by dividing it into three parts; flavor accordingly with cocoa powder for chocolate and strawberry essence with dye for strawberry.
  8. Frost cupcakes with alternating flavors and decorate as desired.
