  • 1 cup sugar
  • 1/4 cup + 2 tbsp natural unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 8 oz cream cheese (divided)
  • 4 tsp strawberry extract
  • 2 tsp vanilla bean paste
  • Whipped cream (Cool Whip or homemade)
  • 1/2 cup (120ml) boiling water
  • 1/2 cup (120ml) milk
  • 3/4 cup (180ml) heavy whipping cream, cold
  • 1/2 cup (58g) powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, mix flour, sugar, cocoa powder, and baking soda. Add egg, buttermilk, vegetable oil, and boiling water; mix until smooth.
  3. Divide batter between pans and bake for 30–40 minutes until a toothpick comes out clean. Cool completely on a rack.
  4. Prepare strawberry ice cream mixture by beating cream cheese and sugar; add milk and strawberry extract then fold in half of the whipped topping.
  5. For the vanilla layer, beat remaining cream cheese with sugar; add milk and vanilla bean paste before folding in remaining whipped topping.
  6. Assemble by layering chocolate cake, strawberry ice cream mixture, second cake layer, then vanilla ice cream mixture on top.
  7. Finish with whipped topping over the entire cake. Freeze for at least four hours before serving.
