- 1/2 cup (120ml) boiling water
- 1/2 cup (120ml) milk
- 3/4 cup (180ml) heavy whipping cream, cold
- 1/2 cup (58g) powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, mix flour, sugar, cocoa powder, and baking soda. Add egg, buttermilk, vegetable oil, and boiling water; mix until smooth.
- Divide batter between pans and bake for 30–40 minutes until a toothpick comes out clean. Cool completely on a rack.
- Prepare strawberry ice cream mixture by beating cream cheese and sugar; add milk and strawberry extract then fold in half of the whipped topping.
- For the vanilla layer, beat remaining cream cheese with sugar; add milk and vanilla bean paste before folding in remaining whipped topping.
- Assemble by layering chocolate cake, strawberry ice cream mixture, second cake layer, then vanilla ice cream mixture on top.
- Finish with whipped topping over the entire cake. Freeze for at least four hours before serving.
