  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for swirl)
  • 1 tablespoon cinnamon (for swirl)

Instructions

  1. Preheat oven to 350°F and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together the zucchini, eggs, oil, yogurt, and vanilla until combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add dry ingredients to wet mixture; stir gently until just combined.
  5. Layer half the batter in the prepared pan. Sprinkle half of the cinnamon sugar mixture on top. Add remaining batter and top with the rest of the cinnamon sugar.
  6. Swirl through the batter with a knife to create a marbled effect.
  7. Bake for 60–65 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10–15 minutes before transferring to a wire rack.
