  • 3 cups fresh peaches, peeled and diced
  • ¼ cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar (for topping)
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour (for topping)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Mix in flour and salt until crumbly. Press into the bottom of the prepared pan to form the crust.
  3. Bake the crust for 15 minutes and set aside to cool slightly.
  4. In another bowl, combine diced peaches with sugar, lemon juice, and cornstarch. Toss to coat.
  5. Spread the peach mixture evenly over the baked crust.
  6. In a separate bowl, whisk together eggs, sugar, sour cream, flour, and vanilla until smooth; pour over peaches.
  7. Bake for an additional 35–40 minutes until the top is golden brown.
  8. Cool completely before cutting into squares.
