  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 can (20 oz) pineapple chunks, drained (reserve juice)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken, soy sauce, olive oil, honey, minced garlic, salt, pepper, ground ginger, and paprika; mix well and marinate for 10–15 minutes.
  3. Spread chopped bell peppers, onion wedges, and drained pineapple on a sheet pan.
  4. Place the marinated chicken on top and pour any leftover marinade over everything.
  5. Bake for 25–30 minutes, stirring halfway through until the chicken reaches an internal temperature of 165°F (74°C).
  6. Garnish with fresh cilantro before serving.
