- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 can (20 oz) pineapple chunks, drained (reserve juice)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 medium red onion, cut into wedges
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken, soy sauce, olive oil, honey, minced garlic, salt, pepper, ground ginger, and paprika; mix well and marinate for 10–15 minutes.
- Spread chopped bell peppers, onion wedges, and drained pineapple on a sheet pan.
- Place the marinated chicken on top and pour any leftover marinade over everything.
- Bake for 25–30 minutes, stirring halfway through until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh cilantro before serving.
