  • 2 cajun-style andouille sausage links (sliced)
  • 1 lb large raw shrimp (peeled and deveined)
  • 6 Tbsp butter (diced)
  • 2 Tbsp fresh lemon juice
  • Fresh thyme leaves
  • Garlic cloves
  • Old Bay seasoning

Instructions

  1. Preheat the grill to medium-high heat (425°F).
  2. Microwave potatoes for about 3 minutes until partially cooked; slice.
  3. Lay out double sheets of heavy-duty aluminum foil.
  4. In the center of each sheet, layer potatoes, corn disks, sausage slices, and shrimp.
  5. Melt butter in a microwave-safe dish; mix in lemon juice, thyme, and garlic.
  6. Drizzle butter mixture over the assembled ingredients; sprinkle with Old Bay seasoning.
  7. Seal packets tightly and grill for 12–15 minutes until shrimp are pink and potatoes are tender.
