  • 1 1/2 medium avocados (diced)
  • 1/2 cup chopped red onion (rinsed)
  • 1 jalapeño (seeded for less heat if desired and minced)
  • 2 Tbsp fresh lime juice
  • 2 Tbsp olive oil (for salsa)
  • Salt and freshly ground black pepper to taste
  • Mexican blend cheese or queso fresco (optional)
  • Plain Greek yogurt or light sour cream (optional)

Instructions

  1. Rinse quinoa and cook in chicken broth according to package instructions until fluffy.
  2. Preheat grill to 425°F. Season chicken breasts with spices and olive oil; grill for about 4 minutes per side or until cooked through.
  3. In a bowl, combine diced tomatoes, avocados, onion, lime juice, and season with salt and pepper to prepare avocado salsa.
