  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz Cool Whip (divided)
  • 3 oz peach vegan gelatin
  • 1 cup boiling water
  • 2 cups diced fresh peaches

Instructions

  1. Preheat your oven to 350°F. In a mixing bowl, combine flour, melted butter, and granulated sugar. Press into the bottom of a 9×13-inch baking dish and bake for 15 minutes until lightly golden. Cool completely.
  2. Beat cream cheese and powdered sugar in another bowl until smooth. Fold in half of the Cool Whip and spread over the cooled crust.
  3. Dissolve peach gelatin in boiling water and allow it to cool to room temperature.
  4. Fold in diced peaches into the cooled gelatin mixture, then spoon this layer over the cream cheese filling.
  5. Cover and refrigerate for at least 4 hours or until set.
  6. Before serving, top with remaining Cool Whip, slice into squares, and enjoy!
