- 8 oz Cool Whip (divided)
- 3 oz peach vegan gelatin
- 1 cup boiling water
- 2 cups diced fresh peaches
Instructions
- Preheat your oven to 350°F. In a mixing bowl, combine flour, melted butter, and granulated sugar. Press into the bottom of a 9×13-inch baking dish and bake for 15 minutes until lightly golden. Cool completely.
- Beat cream cheese and powdered sugar in another bowl until smooth. Fold in half of the Cool Whip and spread over the cooled crust.
- Dissolve peach gelatin in boiling water and allow it to cool to room temperature.
- Fold in diced peaches into the cooled gelatin mixture, then spoon this layer over the cream cheese filling.
- Cover and refrigerate for at least 4 hours or until set.
