Instructions

  1. Prepare pastry cream by heating milk, cream, and half of the sugar in a saucepan until simmering. Whisk remaining sugar, salt, cornstarch, and egg yolks in a bowl. Gradually mix warm milk into egg mixture to temper, then combine back into saucepan and heat until thickened. Remove from heat; stir in butter and vanilla. Chill for at least two hours.
  2. For the tart crust, combine flour, confectioners' sugar, and salt in a food processor. Add cold butter until crumbly; then mix in heavy cream until dough forms a ball. Chill dough for at least an hour.
  3. Roll out the chilled dough into a circle larger than your tart pan. Place it into the greased pan and bake at preheated oven temperatures of 400°F (204°C) for about 10 minutes; reduce to 350°F (177°C) until golden brown.
  4. Once cooled, spread pastry cream over crust evenly and top with fresh fruit decoratively. Optionally brush with warmed apricot preserves for shine.
