  • pounds potatoes, cubed (optionally peeled)
  • 3 tablespoons fresh parsley, chopped
  • 3 tablespoons fresh dill, chopped
  • 3 green onions, thinly sliced
  • ¼ cup cornichons or dill pickles, diced (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons red apple vinegar or sherry vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon grainy mustard
  • 1 clove garlic, minced or grated (optional)
  • 1 tablespoon cornichon (pickle) juice (optional)
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes in salted water until tender (8–10 minutes). Drain and cool slightly.
  2. In a small bowl, whisk together olive oil, vinegar, mustards, garlic (if using), cornichon juice (if using), salt, and pepper.
  3. In a large bowl, toss the warm potatoes with parsley, dill, green onions, shallot (if using), and cornichons.
  4. Pour the dressing over the salad and gently mix to coat evenly.
  5. Serve immediately or refrigerate for an hour to enhance flavors.
