  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Juice and zest of 1 large lime
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 clove garlic (chopped)
  • 1 jalapeño (chopped)
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Cut the chicken into bite-sized pieces and place in a zip-top bag.
  2. In a bowl, whisk together canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt. Pour over chicken and marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium-high heat. Soak wooden skewers in water if using.
  4. Chop the bell peppers and onion into chunks. Thread marinated chicken and vegetables onto skewers.
  5. Lightly oil the grill grates and cook kebabs for about 6 to 8 minutes until chicken is cooked through, turning occasionally.
  6. Serve warm with fresh cilantro and lime wedges.
