  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups warm whole milk
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C) and line baking trays with parchment paper.
  2. Roll out puff pastry sheets slightly and prick with a fork. Place on trays, cover with parchment, and weigh down.
  3. Bake for 35-45 minutes until golden brown; cool completely.
  4. Trim edges of cooled puff pastry to fit an 8×8-inch pan.
  5. In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix well.
  6. Warm milk in another saucepan without boiling.
  7. Slowly temper eggs with warm milk mixture; then combine back into the saucepan and cook until thickened.
  8. Stir in vanilla seeds and cold butter until smooth.
  9. Line the pan with foil, place one pastry layer at the bottom, pour in custard, then top with another pastry layer. Chill for at least four hours or overnight.
  10. Cut into squares using a serrated knife and dust with powdered sugar before serving.
