  • 1 pound boneless skinless chicken breasts, diced

  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas and carrots

Instructions

  1. In a large skillet over medium heat, melt butter and olive oil. Season diced chicken with salt and pepper; sauté until golden brown (5-7 minutes). Remove from skillet.
  2. In the same skillet, sauté onion and garlic until fragrant (2-3 minutes).
  3. Stir in rice; toast lightly (1-2 minutes).
  4. Add chicken broth; bring to a boil. Reduce heat, cover, and simmer until rice is tender (18-20 minutes).
  5. Stir in heavy cream, cooked chicken, peas, carrots, Parmesan cheese, and paprika; cook until heated through (about 5 minutes).
