  • 2 tbsp vegetable oil
  • 1 large onion
  • 3 cloves garlic (plus 2 for naan)
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 can chickpeas (15 oz)
  • 1 can coconut milk (13.5 oz)
  • 1 cup beef broth
  • Fresh cilantro
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 cups all-purpose flour
  • ½ cup plain yogurt

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent, then add minced garlic and grated ginger.
  2. Add beef stew meat, season with salt and pepper, and brown on all sides for about 6-8 minutes.
  3. Stir in curry powder, cumin, and optional chili flakes; cook for another minute.
  4. Pour in coconut milk, beef broth, chickpeas, and tomato paste; stir to combine.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for 45 minutes to an hour until beef is tender.
  6. For garlic naan: Mix flour, salt, baking powder with yogurt until dough forms; divide into balls and roll out.
  7. Cook naan in a skillet until golden brown on both sides; add minced garlic towards the end if desired.
  8. Serve curry warm garnished with fresh cilantro alongside hot garlic naan.
