  • 2 tsp corn starch
  • 1 tsp baking soda
  • 1 tsp baking powder

  • 1 cup cold, unsalted butter, cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp softened butter
  • 2 Tbsp cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon until smooth.
  3. In a large bowl, combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In a stand mixer, cream cubed butter and granulated sugar together until smooth. Add eggs and vanilla extract; blend well.
  5. Gradually incorporate the dry ingredients until just combined.
  6. Roll out dough into a rectangle on a floured surface and spread the cinnamon filling evenly over it.
  7. Roll the dough tightly from one edge and cut into 10-12 equal pieces.
  8. Bake for 9-11 minutes or until edges are lightly golden brown.
  9. Cool cookies on a rack before frosting with cream cheese mixture.
