  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • Chili flakes (optional)
  • Salt & pepper to taste
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook rice in salted water until tender (about 15 minutes).
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Sauté the chicken until browned and cooked through; set aside.
  4. In the same pan, add sesame oil, onions, and garlic. Sauté until fragrant.
  5. Add broccoli and mushrooms; cook until tender-crisp.
  6. Return chicken to the pan and mix in soy sauce; add chili flakes if desired.
  7. Stir in cornstarch slurry to thicken the sauce; season to taste.
  8. Serve hot over rice or noodles.
