- 500g chicken breast, diced
- 2 cups broccoli florets
- 2 cups mushrooms, sliced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp cornstarch + 2 tbsp water (for slurry)
- Chili flakes (optional)
- Salt & pepper to taste
- 1 cup jasmine or basmati rice
- 2 cups water
- Pinch of salt
Instructions
- Cook rice in salted water until tender (about 15 minutes).
- Heat olive oil in a large skillet or wok over medium-high heat.
- Sauté the chicken until browned and cooked through; set aside.
- In the same pan, add sesame oil, onions, and garlic. Sauté until fragrant.
- Add broccoli and mushrooms; cook until tender-crisp.
- Return chicken to the pan and mix in soy sauce; add chili flakes if desired.
- Stir in cornstarch slurry to thicken the sauce; season to taste.
- Serve hot over rice or noodles.
