  • 2 tsp (10ml) vanilla extract
  • 1/2 tsp (2.5ml) maple extract, optional
  • 1/2 c (100g) granulated sugar
  • 1/2 tsp pumpkin or chai spice blend

Instructions

  1. Prepare brown butter by melting it over medium heat until it becomes golden brown; cool for 30 minutes.
  2. Blot canned pumpkin to remove excess moisture.
  3. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  4. In a large mixing bowl, combine cooled brown butter, light brown sugar, and maple syrup until blended; add egg yolk and mix.
  5. Stir in blotted pumpkin puree along with vanilla extract.
  6. Gradually fold in the dry ingredients until just combined.
  7. Chill the dough in the refrigerator for at least 8 hours or overnight.
  8. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  9. Mix granulated sugar with additional spice blend for coating.
  10. Roll cookie dough into balls and coat in the spiced sugar mixture before placing on baking sheets.
  11. Bake for 12-14 minutes until edges are set; cool slightly before transferring to a wire rack.
