  • 1 pound fresh cherries, pitted and halved
  • 1/4 cup Amaretto liqueur
  • 1 tablespoon sugar
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 16 ladyfingers
  • 1/2 cup brewed espresso, cooled
  • Cocoa powder, for dusting
  • Shaved dark chocolate (optional)

Instructions

  1. In a small bowl, combine cherries with Amaretto and sugar. Let sit for 30 minutes.
  2. In a large bowl, whisk together mascarpone cheese, powdered sugar, and vanilla until smooth.
  3. In another bowl, whip heavy cream to stiff peaks. Gently fold into the mascarpone mixture until combined.
  4. Dip each ladyfinger quickly into the cooled espresso and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers followed by half of the cherry mixture.
  6. Repeat layers with remaining ingredients.
  7. Dust the top with cocoa powder before refrigerating for at least 4 hours.
