  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • ½ cup chopped pistachios
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • Sea salt and cracked black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved plums cut-side up on a lined baking tray. Drizzle with olive oil.
  3. Roast for 20-25 minutes until soft and caramelized.
  4. Remove from the oven and allow to cool slightly.
  5. On a serving plate, place burrata in the center and surround it with roasted plums.
  6. Sprinkle with chopped pistachios and thyme leaves; drizzle with extra olive oil and season with salt and pepper.
  7. Serve immediately, ideally with toasted sourdough or artisan crackers.
