  • ¼ cup bourbon
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons garlic, minced

  • ¼ teaspoon red pepper flakes
  • 4 salmon fillets (about pounds, skins on)
  • 2 medium peaches (pitted, thinly sliced)

Instructions

  1. In a mixing bowl, whisk together peach preserves, bourbon, olive oil, soy sauce, garlic, salt, black pepper, and red pepper flakes.
  2. Reserve half of the marinade in the fridge for later use. Marinate the salmon fillets in the remaining marinade for at least 30 minutes.
  3. Preheat your oven to 375°F and heat an oven-safe skillet over medium-high heat with oil.
  4. Sear the marinated salmon skin-side up for about 3 minutes until golden brown.
  5. Flip the fillets skin-side down, add sliced peaches around them, and cook for another 2-3 minutes.
  6. Pour reserved marinade over the dish and transfer it to the oven. Bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F.
