  • 2 cups bell peppers (diced)
  • 1 cup red onion (diced)
  • 3 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your Blackstone grill to medium-high heat for about 5 minutes.
  2. Boil a pot of salted water, add tortellini, and cook according to package instructions (3-5 minutes). Drain and set aside.
  3. In a mixing bowl, combine diced bell peppers, red onion, minced garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper. Toss well.
  4. Grill sliced chicken sausage for about 3-4 minutes until browned.
  5. Move the sausage to one side and add the seasoned vegetables on the other side of the grill. Cook for another 5-7 minutes until tender.
  6. Add drained tortellini to the grill and gently toss everything together for another 2-3 minutes until heated through.
  7. Adjust seasoning as needed before removing from the grill.
  8. Garnish with fresh parsley before serving.
