  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by beating cold cream cheese with granulated sugar and vanilla until smooth; set aside.
  2. Preheat your oven to 350°F (175°C). Cream together softened butter, light brown sugar, and granulated sugar until fluffy. Mix in egg yolks and vanilla.
  3. Gradually add flour, black cocoa powder, baking powder, and salt; mix until combined.
  4. Scoop dough, flatten it, add cheesecake filling in the center, fold dough around it, and roll into balls.
  5. Place on parchment-lined baking sheets and bake for 10–12 minutes until edges are set. Cool before serving.
