Ingredients

- 3–4 oz arugula
- 1 cup cherry tomatoes
- ½ red onion
- ½ cup black olives
- ¼ cup shaved parmesan cheese
- ¼ cup extra virgin olive oil
- 2 tbsp vinegar
- 1 tbsp lemon juice
- 1 tbsp maple syrup or honey
- ½ tsp dried oregano
- ½ tsp dried basil
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Place arugula in a large bowl or serving platter.
- Drain artichokes and scatter over the arugula.
- Add halved cherry tomatoes, sliced red onion, and black olives.
- In a small jar, combine the dressing ingredients and shake well.
- Drizzle half the dressing over the salad and toss gently.
