Ingredients
- 2 cups apple cider
- 3 tbsp granulated sugar
- 1 ¾ cups all-purpose flour
- 2 ½ tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 egg yolks, at room temperature
- 2 tsp vanilla
- 6 oz cream cheese, cold
- 2 tbsp apple cider reduction
- 1/4 cup granulated sugar for topping
- 1/4 tsp ground cinnamon for topping
- 1/8 tsp ground nutmeg for topping
- pinch ground allspice for topping
- 1–2 tbsp salted butter, melted for topping
Instructions
- Prepare the apple cider reduction by simmering apple cider in a saucepan until it reduces by half (about 30–40 minutes). Allow cooling.
- In a mixing bowl, beat cold cream cheese with granulated sugar and vanilla until smooth; set aside.
- In another bowl, cream softened butter and sugars together until fluffy. Add egg yolks and mix well.
- Gradually incorporate flour, spices, baking powder, baking soda, salt, and cooled apple cider reduction into the mixture until fully blended.
- Preheat oven to 350°F (175°C). Scoop dough onto a parchment-lined baking sheet, create an indentation in each ball, fill with cheesecake mixture, and top with more dough.
- Bake for approximately 11 minutes or until golden brown around the edges.
