  • 1 medium onion, diced
  • 1 large leek, sliced
  • 3 large carrots, thinly sliced
  • 3 stalks celery, thinly sliced
  • 3 cloves garlic, chopped
  • 1 tsp kosher salt
  • 1 tsp turmeric
  • 1 tsp poultry seasoning
  • 1/2 tsp black pepper
  • 6 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 ¼ lbs boneless skinless chicken thighs or breasts
  • 1 10 oz bag frozen peas (optional)
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Sauté onions, leeks, carrots, celery, and salt for about 14–16 minutes until soft.
  2. Add garlic, turmeric, and poultry seasoning; sauté for another 2–3 minutes until fragrant.
  3. Pour in the chicken broth and coconut milk; add the chicken. Partially cover and simmer on low for 15–20 minutes until cooked through.
  4. Remove the chicken to shred it into bite-sized pieces before returning it to the pot along with optional peas and fresh parsley.
  5. Season with salt and pepper to taste before serving.
